
Monday: Pork Chops and Potatoes in Mustard Sauce (made in the crock-pot) with peas.
Tuesday: Cheese tortellini with broccoli and jarred pesto sauce, salad with lettuce, tomato and Greek dressing for mama and papa.
Wednesday: Leftovers from Monday
Thursday: Tofu and veggie stir-fry with brown rice. Balsamic peaches for mama and dada's dessert, scroll down for recipe.
Friday: Errand day - take-out
Saturday: Dinner with friends!
Sunday: I am planning making something that I can freeze half of - maybe a chicken curry or some shepherd's pie.
Note: The kids both eat fruit every night in addition to their meals.
Balsamic Peaches
This is so simple, it really doesn't have a recipe. Just slice your ripe peaches, add them to a bowl, drizzle them with a touch of balsamic vinegar and top them with a grind of fresh black pepper.

So simple, yet so delicious, and definitely company worthy.
