Such a simple lunch, but one of my favorites. I don't have an actual recipe for it, that's how simple it is. I just spread two slices of my favorite sandwich bread, in this case, oat, with hummus and then pile one side high with any combination of lettuce, tomato, onion, cucumber, carrot, bell peppers or roasted peppers, and top it with the second slice of bread. Delish!
