Menu Plan Monday...



Okay.

So here's the deal.

Every week I come up with a menu plan fully thinking that I'm going to follow it exactly as written, and each week, things change. Unexpected errands or outings come up and I flake out on the menu. Then I feel like an unorganized loser.


But honestly.

My week can not revolve around a menu. The menu must revolve around my week.

So, I'm going to continue to plan a menu based on what I have in the house, but I'm only going to follow it when it's going to work in our schedule.

Cause really, life can't be planned, it has to happen.


Monday: Crock pot pork chops (scroll down for recipe), brown rice, steamed broccoli, Oreo pudding.

Tuesday: Tofu and veggie stir fry, rice, fruit.

Wednesday: Salmon cakes, brown rice, steamed veggies, fruit.

Thursday: Lazy girls pasta primavera (recipe coming on Thursday), salt and pepper crostini, fruit.

Friday: Errand day, getting take out at our fave Vietnamese place.

Saturday: Photo shoot and a meeting, supper out for mama and dada.

Sunday: Burgers on the grill, potato salad, fruit.

Crock pot pork chops


4 boneless center-cut pork chops
1 onion, sliced
1/2 cup ketchup
1 tsp mustard
1 tsp brown sugar
1 tsp soy sauce
2 tsp vinegar (I used cider vinegar)

Arrange chops in bottom of crock. Cover with onion slices. Mix remaining ingredients in a small bowl and pour over pork and onions. Cover and cook on low for 6 hrs or until tender.

  1. I understand. What has helped me is not assigning days to my meal plan and I have only assigned a day if I know I would be busy. Then I could eat what I felt like and on those busy days I had a quick easy meal planned so I didn't end up in a drive-thru. Whatever you chose to do don't set yourself up. Meal planning is about saving time and money not setting yourself up to fail. Do what works for you!
